Having a very simple tea tonight - still not sure what - as we've got OH's parents coming for dinner tomorrow night and I'm doing a trio of crostini, followed by wild mushroom risotto, followed by roast lamb in white wine with little rosemary roast potatoes, griddled courgettes and fine green beans with a vinagrette dressing and an apricot frangipan tart to finish!

Dan bought a chickpea roast just before Christmas so I think we're going to have that with potatoes, broccoli and maybe some peas or something.

We've been eating up all the stuff we bought for over the holiday period and didn't eat.
Sunday - gnocchi, griddled veg and spicy tomato sauce
Monday - pie and mash *yum*
Tonight - mushroom tortelloni

I'm making an attempt to use bits and pieces from the freezer. Today was the day of the fish bag. Got 3 pieces of salmon and 2 pieces of 'smoked white fish' (hmm Aldi's best) and made a fish pie for my boys and I had plain salmon with a sprinkle of teryaki marinade. Then I found out how much carbohydrate the marinade has. Oh dear! But it was yummy!
Today has been my first day back at Dukan. Been really hard going. There's still the dregs of the Christmas food about.
Getting a meal plan together for the next 10 days till we take ds back to University. Dd goes back to Italy on Sunday, so it's her favourites and must haves this week, then ds's favourites next week. Also trying to make use of what is in the freezer to avoid spending.

Croissants with ham and brie to use up most of the leftover Christmas brie (which was a bargain to start with) served with chips and salad - dead easy tea as I'm half way through a really boring OU essay, in fact I should be doing that right now instead of procrastinating and reading forums!!!!!

I'll be making a veggie sausage, tomato, mushroom and cider casserole we'll either have half tonight with rice

We had cold gammon slices left over from our roast. Cut up tomatoes with pepper, and wedges. Simple meal and so tasty.

On protein only at the moment, so a bit tricky. DD still at home and one of the things she wants to have before going back to Italy at the weekend is fish and chips, so they will probably have that. I'll have some random protein or other, probably chicken thighs.

Got a bit of whoopsied pork loin when I popped into tescos to pick up some bits for lunch after DD's group so will have to think of something to do with that, might do a casserole with some smoked paprika in.

tonight half price lamb leg steak kebabs; I got a whole leg for £12 from sainsbury's before xmas, cut it at the knuckle, and removed half of the meat from the long end and then froze. the biggest chunk I roasted last night with rosemary and garlic on a bed of potatoes and onions, I have the steaks from the fat side of the long end tonight, the shank is still frozen but will be curry at the end of the week.
to go with the kebabs I'm making flatbreads from SR flour and soya yogurt. we'll have salad with them too. I'm using a whole pot of soya yogurt so that's enough flatbreads for two meals, so we'll have tacos tomorrow. salad, flatbreads and taco mince.
I tend to make sure all of my meals mesh, I want to do it more this year because we saved so much just doing it for a few months last year. we had a holiday!!! that's such an incentive.
So from last week we had:
thurs pizza for 2 adult dinners (sophie hates pizza! she had veggie noodles) and an adult lunch, and a loaf for with soup from 1kg of bread dough (from scratch).
fri fish and chips as a treat. home made curry sauce and mushy peas though!
sat home made soup (celery) with the bread from thursday. I made double my normal amount for us, but everyone ended up having seconds so I only have one portion left to freeze! doesn't bother me though, sophie inhaled sooo much of it it made my week!
sun roast lamb on potatoes and onion with roast parsnips and carrots. enough lamb for all 3 of us for dinner, seconds for jim and the last bits he took to work with him along with an 11p pack of noodles and a stock cube and he had lamb noodles for his "lunch" at 1am.
today it's lamb kebabs and
tomorrow tacos
wednesday probably either curry, or spag bol.
I am enjoying the challenge of cooking for less. we're also doing so very well with the eat what you buy veg challenge I set us last summer as well!

Every Tuesday is Burger and chips night
it started when the children were little and Tuesday was my hubbys day off and its carried on for 23 years
