Autumn/Winter Recipes
Does anyone have any good recipes for the cold weather? Especially interesting ways to use root veg. Meaty or veggie, main meal or side dishes I don't care, I'll steal them all
TIA

Re: Autumn/Winter Recipes
I did a lovely root veg tagine the other week with whatever came in the box, a bag of chickpeas from the freezer (Ibulk cook), a tin of tomatoes and a handful of chopped dates. I just cooked off the spices (cumin, coriander, cinnamon, paprika, cayenne, flaked chilli) and garlic with a chopped onion, bunged everything else in and chucked it in the oven for just over an hour I think.
You can also par boil root veg til knife point and put into a prepared blind baked pie dish with a good slug of really mustardy (Gritty mustard at that) white sauce, put a lid on and bake. As your're not keen on the creamy I'm sure this would also work with veg stock thickened with cornflour and a good tablespoon of gritty mustard.

Thanks SW. I love tagine, we seem to eat it loads in the spring but less often in the winter. Will add it to the list. I love and embrace whoever it was who told me to cook a whole back of chickpeas in one go then freeze them. So much cheaper and easier!

Re: Autumn/Winter Recipes
anything cooked in the slow cooker, smelling it cooking all day is just mmmmmmmmm just the smell of it warms me up
we like root veg mash in winter, carrot and potato, sweede, butternut squash, sweet potato, either as a side or as a topping on a cottage pie,
also seem to eat more pastry pies in winter e.g chicken, kids love pastry pies not so keen on pastry myself but tend to buy them might have a go at making my own this year if only to brush up on my pastry skills!
