Thought I'd start a new thread and maybe get this thread going again. So what's for dinner tonight?
We're in need of some comfort food so we're having chestnut cobbler with herby roast potatoes.

We had planned to have salad too, but need something more hearty I think.
Last night I stuffed a pork loin with a stuffing made from mushrooms, tomotoes, red onion and paprika which we had with rice.
Thinking caps are on...

We're having a junk food tea tonight as the holiday weekend starts so we're having spicy bean burgers with potato wedges and dips.

Toad in the hole and I am trying a new recipe: "Tian du Midi" which is thinly sliced potato, onion, herbs and grated cheese layered up in a dish topped with tomatoes and cooked on the hob until the base is crispy.
I found the recipe in my retro French cookery book that I found in a charity shop.

It was lovely, Although the crispy bottom bit stuck to my pan, I managed to recue most of it!, and its really simple to make.
Slice some potatoes really thin (waxy is best), onion and grate some cheese (The recipe said parmesan, but I used cheddar - Gruyere would be nice though)
In a heavy bottomed pan (I used a sautee pan, but next time I would use a deep non stick frying pan) put a little olive oil and layer potato, onion and cheese putting a little thyme and seasoning inbetween.
You need to cook this for about 40 minutes on low on the hob. Keep loosening the sides with a palette knife and shaking the pan to stop it sticking.
Then add sliced tomatoes to the top and cook for a further 20 minutes - cover the pan about half way through the first stage.
Then turn out onto a plate.
The book says to use "herbe du midi", which is a mix of dried mediterranean herbs, but if you can't find that, to just use thyme which is what I did. But I will endeavour to find out what "herbe du midi" consists of.

We are going to pick some purple Curly Kale, some spurting purple broccoli spears and some green spurting broccilli spears but not sure what we are going to eat with them though
